White Beans and Pasta Recipe

At first I thought it’s a odd combination — white beans and pasta recipe. Once Holly fixed it, I think I ate three plates. True confessions! What makes this white beans and pasta recipe romantic? I think it’s the uniqueness of the combination of ingredients and of course the pesto with basil. Try it yourself!

4 1/4 c. Dry bow-tie pasta or anything similar you might have
4 c. Water
2 Small or 1 large chicken bouillon cubes
2 tbsp. Pesto with basil sauce
2 Medium size tomatoes, chopped, or a medium size can of chopped tomatoes
1 – 15 oz. Can white beans (navy or great northern), drained
1/3 c. Grated Parmesan cheese, or 1/2 c. any other white cheese

Combine pasta, water and bouillon in a large saucepan. Bring it to a boil and cook while stirring frequently for 8 to 10 minutes or until the pasta is tender and the broth has reduced to about 1/2 cup. Do not drain. Reduce the heat and add the pesto sauce.

The frequent stirring is important to cook the pasta evenly and keep it off the bottom of the pan

Continue cooking, stirring frequently, until the sauce has reduced slightly. Then stir in the chopped tomatoes, drained beans and cheese. Continue cooking, stirring frequently, until thoroughly heated.

Add a few grinds of fresh black pepper before serving.
